Description

The ultimate ceremonial dessert centerpiece for Chinese New Year. A glistening dome of sweet, sticky glutinous rice packed around a hidden core of rich red bean paste. The exterior is intricately decorated with "eight treasures"—an array of colorful dried fruits, nuts, and seeds symbolizing health and prosperity.

Presentation & How It's Eaten

Served steaming hot on a large communal platter, drizzled with a clear, sweet osmanthus glaze. Diners use chopsticks or spoons to break into the dome, mixing the fruits, sticky rice, and sweet bean core together.

Ingredients

  • 250g glutinous rice (sticky rice)

  • 2 tbsp lard or melted unsalted butter

  • 2 tbsp granulated sugar

  • 150g sweet red bean paste

The Eight Treasures (approx. 10g each):

  • Dried red dates (jujubes), split and pitted

  • Dried longan or raisins

  • Goji berries

  • Candied lotus seeds (halved)

  • Walnut halves

  • Pumpkin seeds or melon seeds

  • Candied cherries or dried cranberries

  • Glacé strips of winter melon or orange peel

The Glaze:

  • 100ml water

  • 2 tbsp rock sugar

  • 1 tsp cornstarch mixed with 1 tbsp water (slurry)

Step-by-Step Directions

  1. Cook Sticky Rice: Soak the glutinous rice in cold water overnight. Drain, then steam it over high heat for 30 minutes until soft and translucent. While still piping hot, fold in the sugar and lard/butter until completely melted and incorporated.

  2. Prep the Bowl Design: Generously grease a medium, heatproof ceramic bowl with lard or butter. Arrange your eight treasures in an attractive, symmetrical geometric mosaic pattern face down along the bottom and sides of the bowl.

  3. Layer Rice: Gently press a layer of the seasoned warm sticky rice over the dried fruits, being careful not to disturb your pattern. Build up the sides of the bowl with rice, leaving a deep hollow crater in the very center.

  4. Stuff Core: Pack the sweet red bean paste firmly into the center crater. Cover the top completely with the remaining sticky rice, smoothing it flat with a greased spatula to seal the bean paste inside.

  5. Final Steam: Place the entire bowl into a steamer and steam over high heat for 30 minutes to lock the elements together and soften the dried fruits.

  6. Invert and Glaze: Remove the bowl carefully. Place your serving platter upside down over the top of the bowl, then swiftly invert it. Lift the bowl to reveal the glistening dome. Boil the glaze ingredients until thick and clear, then pour over the pudding before serving.

Cooking Tips

  • Lard is Authentic: Traditional Ba Bao Fan relies on pure pork lard to coat the bowl and season the rice. It gives the sticky rice an unmatched mirror-like gloss and a subtle depth of flavor that balances out the intense sweetness of the dried fruits. Melted butter works well as a vegetarian substitute.
