Description
A deeply comforting, velvety soup prepared from rich palm nut fruit pulp simmered with smoked fish, beef, or offal and West African seasonings.
Presentation & How It's Eaten
Served hot in deep bowls alongside warm Fufu or Akoumé. Eaten using hands to dip swallowed dough into soup.
Ingredients
1 can (14 oz) canned palm nut concentrate (or 20 oz fresh palm fruit pulp)
1 lb beef chuck or goat meat, cubed
1 cup smoked fish (catfish or tilapia), cleaned
1 large yellow onion, blended
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 cups beef stock or water
1 Scotch bonnet pepper
1 tbsp ground crayfish powder
Salt, to taste
Step-by-Step Directions
Boil Meat: In a large pot, combine beef, half blended onion, garlic, ginger, and 1 tsp salt. Cook over medium heat for 20 minutes until meat releases juices and softens.
Add Palm Base: Add palm nut concentrate, remaining blended onion, and 2 cups beef stock to pot. Stir thoroughly to dissolve concentrate.
Simmer: Bring soup to a boil, then reduce heat to medium-low. Add smoked fish, crayfish powder, and whole Scotch bonnet pepper. Simmer uncovered for 30–35 minutes until oil separates on surface.
Adjust Seasoning: Season with salt as needed. Remove Scotch bonnet pepper before serving.
Optional
Vegetable Additions: Drop in whole okra pods during final 10 minutes of cooking.
Cooking Tips
Simmer Uncovered: Cooking palm nut soup uncovered allows excess liquid to evaporate and thickens broth naturally.
