Description: A comforting West African sweet dessert featuring steamed millet couscous folded into a rich, sweetened cream and yogurt base spiced with nutmeg.
Presentation & How It's Eaten: Served chilled in dessert cups or glasses, garnished with a sprinkle of ground nutmeg or toasted peanuts. Eaten with a spoon.
Ingredients:
1 cup millet couscous (millet semolina)
1.5 cups hot water
2 cups plain Greek yogurt or sour cream
1 can (14 oz) sweetened condensed milk
1/2 cup evaporated milk
1/2 tsp ground nutmeg
1 tsp vanilla extract
2 tbsp sugar (adjust to taste)
Step-by-Step Directions:
Steam Millet: Place millet couscous in a heatproof bowl, pour hot water over it, cover, and let steam for 10 minutes until tender. Alternatively, steam in a steamer basket for 15 minutes.
Cool Millet: Fluff the steamed millet with a fork and let it cool completely to room temperature.
Prepare Sweetened Yogurt Base: In a large bowl, whisk together the Greek yogurt, sweetened condensed milk, evaporated milk, ground nutmeg, vanilla extract, and sugar until completely smooth.
Combine: Gently fold the cooled millet couscous into the sweet yogurt mixture until evenly distributed.
Chill: Cover and refrigerate for at least 1 hour before serving chilled.
Optional: Top with raisins, toasted coconut flakes, or chopped peanuts before serving.
Cooking Tips: Ensure the millet is fully cooled before combining with the dairy mixture to keep the texture creamy and prevent the yogurt from separating.
