Description

Curau de Milho Verde is a traditional Brazilian sweet corn pudding popular during June Festivals (Festas Juninas). Made from fresh sweet corn blended with milk and sugar, it cooks into a comforting, naturally thick custard.

Presentation

Ladle into individual glass bowls or ramekins and dust generously with ground cinnamon before serving warm or chilled.

Ingredients

  • 4 ears of fresh sweet corn (kernels cut from the cob, ~3 cups)

  • 2 cups whole milk

  • 1/2 cup full-fat coconut milk

  • 3/4 cup granulated sugar

  • 1 tbsp unsalted butter

  • 1 pinch of salt

  • Ground cinnamon for dusting

Directions

  • Place the corn kernels, whole milk, and coconut milk into a blender and process on high for 2 minutes until smooth.

  • Strain the corn mixture through a fine-mesh sieve or nut milk bag into a saucepan, pressing firmly to extract all liquid while discarding the fibrous pulp.

  • Stir the sugar, butter, and salt into the corn liquid in the saucepan.

  • Set over medium heat and stir constantly with a wooden spoon or silicone spatula.

  • Bring to a gentle boil, then reduce heat to low and cook for 15 to 20 minutes until the mixture thickens to a pudding consistency.

  • Pour into individual dessert bowls and sprinkle ground cinnamon over the surface.

  • Serve warm immediately, or chill in the refrigerator for 2 hours to set completely.

Optional Variations

  • Condensed Milk Curau: Substitute 1/2 can of sweetened condensed milk for the granulated sugar for added creaminess.

  • Vegan Curau: Replace whole milk with coconut milk or oat milk, and use plant-based butter.

Cooking Tips

  • Stir constantly from the moment heat is applied to prevent the cornstarch solids from lumping at the bottom.

  • Use fresh, juicy corn ears rather than canned corn for the best flavor and natural starch set.
