Description
An ultra-elegant, classic dessert. Paper-thin French crêpes are folded into triangles and simmered in a vibrant sauce of caramelized sugar, rich butter, fresh orange juice, and orange zest, before being dramatically flambéed with Grand Marnier.
Presentation & How It's Eaten
Typically prepared or finished tableside in restaurants for visual flair. Served hot right after the flames die down, coated in the syrupy reduction.
Ingredients
For the Crêpes:
125g flour
2 large eggs
250ml milk
1 tbsp melted butter
1 pinch of salt
For the Suzette Sauce:
100g unsalted butter
75g granulated sugar
Zest and juice of 2 large oranges
50ml Grand Marnier (or Cointreau)
2 tbsp Cognac
Step-by-Step Directions
Make Crêpes: Whisk flour, eggs, milk, melted butter, and salt into a smooth batter. Cook thin crêpes in a lightly greased skillet for 1 minute per side. Fold each crêpe into quarters (triangles) and set aside.
Melt Sugar: Melt the sugar in a large, wide skillet over medium heat until it starts to turn golden brown and caramelize.
Add Butter & Citrus: Stir in the butter, orange zest, and orange juice. Bring to a simmer, stirring until the caramel dissolves into a smooth sauce.
Coat Crêpes: Place the folded crêpes into the simmering sauce, turning them once so they absorb the rich liquid.
Flambé: Pour the Grand Marnier and Cognac over the crêpes. Carefully ignite the alcohol using a long match or lighter. Gently shake the pan until the flames extinguish naturally. Serve immediately.
Optional
Ice Cream: Serve with a side scoop of high-quality vanilla bean ice cream to cut the richness of the citrus syrup.
Cooking Tips
Flambé Safety: Always turn off your stove's exhaust hood before igniting the alcohol so the flames aren't drawn upward into the ventilation system.
