Description
Coq au Vin is a majestic French classic that translates directly to "rooster in wine". Historically, it was created as a clever method to tenderize tough, older roosters by slow-braising them in acidic, full-bodied red wine. Modern adaptations use tender chicken pieces, but preserve the incredibly deep, savory braising liquid made from red Burgundy wine, bacon fat, chicken/beef stock, mushrooms, and sweet pearl onions.
Presentation & How It's Eaten
The chicken skin absorbs the wine, turning a rich, dramatic purple-red hue. It is beautifully presented in a shallow bowl, garnished with crispy pork lardons and freshly chopped flat-leaf parsley. Pair it with roasted fingerling potatoes, egg noodles, or thick slices of garlic-rubbed bread to scoop up the velvety sauce.
Ingredients
1.5kg (approx. 3.5 lbs) bone-in, skin-on chicken thighs and drumsticks
150g (5 oz) thick-cut bacon or pancetta, sliced into lardons
1 bottle (750ml) dry red Burgundy wine (Pinot Noir)
1 large yellow onion, diced
1 large carrot, peeled and sliced
2 cloves garlic, minced
1 tbsp tomato paste
2 tbsp all-purpose flour
2 tbsp unsalted butter (at room temperature)
1.5 cups (350ml) unsalted chicken or beef stock
A bouquet garni (parsley sprigs, thyme sprigs, 1 bay leaf)
For the garnish:
200g (approx. 7 oz) pearl onions, peeled
250g (approx. 8 oz) fresh button mushrooms, quartered
1 tbsp butter
Chopped fresh flat-leaf parsley
Step-by-Step Directions
Marinate the Chicken (Optional): In a large bowl, combine the chicken pieces, carrots, yellow onion, bouquet garni, and the bottle of red wine. Cover and marinate in the refrigerator for at least 6 hours (or overnight) to allow the deep wine flavor to penetrate the meat.
Crisp the Lardons: In a large Dutch oven, cook the bacon lardons over medium heat until browned and crispy (about 10 minutes). Transfer the bacon to a plate lined with paper towels using a slotted spoon, keeping the rendered bacon fat in the pot.
Sear the Chicken: Remove the chicken from the marinade and pat it thoroughly dry with paper towels (reserve the marinade and vegetables). Heat the bacon fat over medium-high heat. Sear the chicken pieces, skin-side down, in a single layer until golden brown on both sides. Remove and transfer to a plate.
Sauté the Aromatics: Add the carrot and yellow onion from the marinade to the pot. Cook for 5 to 8 minutes until lightly browned. Stir in the minced garlic and tomato paste, cooking for 1 minute until fragrant.
Simmer and Reduce: Pour in the reserved wine marinade. Bring to a boil, scraping up the browned bits from the bottom, and reduce the liquid by half. Return the chicken, half of the crispy bacon, and the bouquet garni to the pot. Pour in the stock to just cover the chicken. Cover tightly and simmer over low heat for 35 to 40 minutes until the chicken is cooked through and tender.
Glaze the Garnish: In a separate skillet, sauté the mushrooms in 1 tablespoon of butter on high heat until golden brown. In the same pan, cook the pearl onions with a splash of stock until tender and caramelized. Set aside.
Thicken the Sauce: Remove the chicken from the pot and set aside. Discard the bouquet garni. In a small bowl, rub the 2 tablespoons of soft butter and 2 tablespoons of flour together to form a smooth paste (beurre manié). Whisk this paste into the boiling braising liquid. Simmer for 2 to 3 minutes until the sauce thickens and becomes glossy.
Combine and Serve: Return the chicken, mushrooms, caramelized pearl onions, and remaining bacon to the pot. Simmer for 5 minutes until warmed through. Taste, adjust seasoning, and serve garnished with fresh parsley.
Optional
White Wine Twist: Swap the red Burgundy for a dry white Alsatian Riesling or Sauvignon Blanc for a lighter, brighter, and highly aromatic variation (Coq au Vin Blanc).
Aromatic Spice: Add a tiny pinch of ground cloves or grated nutmeg into the onion mixture to introduce a subtle, warm, woodsy background note.
Prevent Sticking: Line the bottom of your skillet with baking parchment when searing the skin-on chicken pieces to prevent them from sticking and tearing if using a regular pan.
Cooking Tips
The Beurre Manié Magic: Never add raw flour directly to hot liquid, or it will clump. Kneading it into soft butter first coats the starch molecules in fat, ensuring they expand slowly and thicken the sauce to a perfectly smooth, lump-free texture.
Bone-In, Skin-On: Always use bone-in, skin-on chicken legs and thighs. The bones yield collagen that gives the sauce its rich, lip-smacking body, while the skin protects the meat from drying out during the braise.
