Description
Whole fresh jalapeños or serranos roll-pressed (toreados) to release internal spicy seeds, then blistered in hot oil alongside sliced onions and tossed in savory lime and soy sauce dressing.
Presentation & How It's Eaten
Served warm on a small plate alongside taco platters, grilled meats (carne asada), or roasted chicken. Eaten as a condiment by taking small bites between tacos.
Ingredients
6–8 whole fresh jalapeño or serrano peppers
1 large yellow or white onion, cut into thick slices
2 tbsp vegetable oil
2 tbsp soy sauce (or Maggi seasoning)
2 tbsp fresh lime juice
Pinch of salt
Step-by-Step Directions
Roll Peppers ("Torear"): Before cooking, roll whole peppers firmly between palms of hands or against a cutting board under pressure. (This breaks internal seeds free, increasing spicy aroma).
Blister Peppers: Heat oil in a heavy skillet or wok over high heat. Add whole peppers and cook, turning frequently, for 5 minutes until skin is deeply blistered and charred.
Sauté Onions: Add sliced onions to skillet with blistered peppers. Sauté for another 4–5 minutes until onions are softened and charred at edges.
Deglaze with Sauce: Turn off heat. Pour soy sauce and fresh lime juice directly over hot peppers and onions in skillet. Toss vigorously as sauce bubbles up.
Serve: Season with a light pinch of salt, transfer to a serving bowl, and serve warm.
Optional
Maggi Seasoning: Substitute soy sauce with Jugo Maggi for an authentic Mexican street-taco stand flavor.
Cooking Tips
Ventilation: Turn on exhaust fans while searing peppers—hot chili fumes released during blistering can cause coughing!
