Description

Bite-sized pieces of tender chicken thigh skewered with green onions and grilled over high heat with a rich tare glazing sauce.

Presentation & How It's Eaten

Served piping hot directly on bamboo skewers as izakaya-style tapas or bar snacks alongside cold beverages.

Ingredients

  • 1 lb boneless chicken thighs, cut into 1-inch pieces

  • 4 green onions, cut into 1-inch segments

  • 1/2 cup soy sauce

  • 1/2 cup mirin

  • 1/4 cup sake

  • 2 tbsp sugar

  • Bamboo skewers (soaked in water for 30 minutes)

Step-by-Step Directions

  1. Make Tare Sauce: Combine soy sauce, mirin, sake, and sugar in a small saucepan. Simmer over low heat for 10 minutes until reduced by half.

  2. Thread Skewers: Thread chicken pieces and green onion segments alternately onto soaked bamboo skewers.

  3. Grill Skewers: Heat a grill rack or broiler. Grill skewers for 4 minutes on high heat until lightly charred.

  4. Glaze: Brush skewers generously with tare sauce, flip, and grill for another 3–4 minutes. Brush again with sauce right before taking off heat.

Optional

  • Shichimi Spice: Sprinkle with shichimi togarashi (Japanese seven-spice blend) before eating.

Cooking Tips

  • Soak bamboo skewers in water for at least 30 minutes prior to cooking so they do not burn over open heat.
