Ingredients
4 boneless, skin-on chicken thighs
2 tbsp soy sauce
2 tbsp mirin
2 tbsp Japanese sake
1 tbsp sugar
1 tbsp vegetable oil
Step-by-Step Directions
Prepare Sauce: In a small bowl, whisk together soy sauce, mirin, sake, and sugar until sugar dissolves.
Sear Chicken: Heat vegetable oil in a skillet over medium-high heat. Place chicken skin-side down and cook for 5–7 minutes until skin is golden and crisp.
Flip & Finish: Flip chicken and cook for another 4–5 minutes until cooked through.
Glaze: Pour sauce into skillet. Simmer over medium heat, spooning glaze over chicken continuously until sauce thickens into a glossy glaze. Slice before serving.
Optional
Sesame Garnish: Sprinkle toasted white sesame seeds and finely sliced green onions on top before serving.
Cooking Tips
Score skin-side lightly with a knife before cooking to prevent chicken from curling up during searing.
