About Chicken Biryani

India's most celebrated rice dish, Chicken Biryani is an aromatic masterpiece of basmati layered with spiced marinated chicken, golden fried onions, and saffron milk. The dum method — sealing the pot so steam perfumes every grain — produces rice that is simultaneously fluffy, tender, and deeply fragrant. Each region of India has its own biryani tradition, from Hyderabadi to Lucknowi, but all share that same soul: patience, layering, and spice.

Ingredients

For the chicken marinade:

  • 1 kg bone-in chicken pieces, skin removed

  • 1 cup plain whole-milk yogurt

  • 2 tsp Kashmiri red chili powder

  • 1 tsp turmeric

  • 1 tsp garam masala

  • 1 tbsp ginger-garlic paste

  • 1 tsp salt

  • 2 tbsp neutral oil

For the rice:

  • 3 cups basmati rice, soaked 30 minutes and drained

  • 4 green cardamom pods, 2 bay leaves, 1 cinnamon stick, 4 cloves, 1 tsp cumin seeds

  • 2 tsp salt

For the layers:

  • 3 large onions, thinly sliced and deep-fried until golden (birista)

  • Large pinch of saffron dissolved in 4 tbsp warm milk

  • 3 tbsp ghee

  • Small handful each: fresh mint leaves, fresh cilantro

Directions

  1. Marinate the Chicken: Combine all marinade ingredients with the chicken. Mix well, cover, and refrigerate for at least 2 hours (overnight is ideal).

  2. Par-Cook the Rice: Bring a large pot of salted water to a rolling boil with whole spices. Add soaked rice and cook until grains are 70% done — still with a slight bite at the centre. Drain immediately.

  3. Cook the Chicken: In a wide, heavy-bottomed pot, heat 3 tbsp neutral oil over medium-high heat. Add marinated chicken and sear for 3–4 minutes per side. Reduce heat and cook, covered, for 15 minutes.

  4. Layer: Spread chicken and its juices across the pot bottom. Scatter half the fried onions and herbs over the chicken. Add half the par-cooked rice. Add remaining onions and herbs, then top with remaining rice. Drizzle saffron milk and ghee over the top.

  5. Dum Cook: Cover the pot tightly — seal with foil under the lid. Cook on the lowest possible heat for 25–30 minutes.

  6. Rest and Serve: Turn off heat and let the pot rest, still sealed, for 10 minutes. Open at the table and gently fold from the bottom up before serving.

Cooking Tips

  • The 70% Rule: Par-cooking the rice to exactly 70% is the most critical step. Fully cooked rice will turn mushy; raw rice will not cook through.

  • Birista Shortcut: Ready-made crispy onions from South Asian grocery stores save 20 minutes without sacrificing flavour.

  • Heat Control: For the dum step, place a heavy griddle under the pot as a heat diffuser if your stove runs hot.
