Origin

  • Region: Sicily

Description

A stunning cooked vegetable salad centered around crispy, golden-fried eggplant cubes tossed in a highly aromatic, glossy agrodolce sauce. The sweet profile of raisins and sugar balances beautifully against the sharp, salty punch of capers, green olives, celery, and red wine vinegar.

Presentation

Traditionally served at room temperature or slightly chilled—never piping hot. It is presented in small ceramic bowls as a side dish to roasted meats, or spooned gracefully onto thick slices of toasted rustic bread as an antipasto.

Ingredients

  • 2 large globe eggplants (approx. 800g total, cut into 1-inch cubes)

  • 1 large yellow onion, sliced thin

  • 2 inner stalks of celery (with leaves), cut into 1/2-inch pieces

  • 400g canned San Marzano whole tomatoes, crushed by hand

  • 80g green Sicilian olives (like Castelvetrano), pitted and coarsely chopped

  • 40g non-pareil capers, rinsed and drained

  • 40g raisins (soaked in warm water for 15 minutes, then drained)

  • 30g pine nuts, lightly toasted

  • 60ml high-quality red wine vinegar

  • 25g granulated sugar

  • 100ml extra virgin olive oil (divided for frying and sautéing)

  • Fine sea salt and freshly cracked black pepper

  • A handful of fresh basil leaves, torn

Step-by-Step Directions

  1. Fry the Eggplant: Heat 60ml of the extra virgin olive oil in a wide, heavy skillet over medium-high heat. Working in batches, add the eggplant cubes and fry until they are deeply golden-brown on all sides and soft in the center (about 8–10 minutes). Remove with a slotted spoon and drain thoroughly on layers of paper towels. Season lightly with salt.

  2. Blanch the Celery: Bring a small pot of salted water to a boil. Drop in the chopped celery and cook for 3 minutes just to remove its raw bite while keeping it crisp. Drain and set aside.

  3. Build the Base: Wipe down the skillet, add the remaining 40ml of olive oil, and lower the heat to medium. Add the sliced onion and cook slowly until soft and translucent (about 6–8 minutes). Stir in the blanched celery, chopped olives, capers, and drained raisins. Cook for an additional 3 minutes.

  4. Add Tomatoes: Pour the hand-crushed tomatoes into the skillet. Season with a pinch of salt and black pepper. Lower the heat and let the mixture simmer gently for 10–12 minutes until the tomatoes breakdown and form a thick sauce.

  5. Create the Agrodolce: In a small small glass, whisk together the red wine vinegar and sugar until the sugar completely dissolves. Pour this mixture into the simmering tomato base. Let it bubble for 2 minutes until the sharp vinegar scent mellows out.

  6. Combine and Rest: Fold the fried eggplant cubes and toasted pine nuts gently into the sauce. Simmer everything together over low heat for 5 minutes so the eggplant absorbs the flavors. Turn off the heat, stir in the torn basil leaves, and transfer the caponata to a bowl. Let it rest for at least 2 hours before serving to allow the complex sweet-and-sour profile to develop.

Optional Variations

  • Caponata di Carciofi: Substitute the eggplant with trimmed, quartered baby artichoke hearts during the winter months when eggplants are out of season.

Cooking Tips

  • Do not skimp on the oil or under-fry the eggplant. Eggplant acts like a sponge; it needs to fry quickly in hot oil to seal the exterior, otherwise it becomes soggy and greasy rather than creamy.
