Description
Café au Lait (literally "coffee with milk") is the warm, comforting centerpiece of a traditional French morning. Unlike a latte or cappuccino, which are made using concentrated Italian espresso and frothed milk, a classic French café au lait uses strong, dark-roasted filter coffee (often brewed in a French press) combined in a strict 1:1 ratio with generously warmed, non-foamed steamed milk.
Presentation & How It's Eaten
It is traditionally served in a wide, handleless ceramic bowl (bol) rather than a mug. This serves a highly functional purpose: it allows you to warm both of your hands on the bowl on cold mornings, and provides a wide enough opening to easily dip a buttered baguette (tartine) or a flaky croissant directly into the coffee.
Ingredients
120ml (1/2 cup) strong, dark-roasted coffee (freshly brewed, preferably chicory-blend)
120ml (1/2 cup) whole milk
Step-by-Step Directions
Brew the Coffee: Brew a double-strength batch of coffee using a French press, drip machine, or moka pot. The brew must be dark and intensely flavored to balance the milk.
Heat the Milk: Pour the whole milk into a small saucepan. Heat over medium-low heat until it is hot and steaming (around 65°C / 150°F), but do not let it boil or skin will form. Alternatively, use the steam wand of an espresso machine without creating thick foam.
Warm the Bowl: Rinse your serving bowl with hot water to warm the ceramic, then dry it.
The Simultaneous Pour: Pour the hot coffee and the hot steamed milk into the bowl at the exact same time from equal heights. This naturally mixes the two liquids without needing a spoon, creating a beautiful, uniform caramel-colored beverage.
Optional
Chicory Blend: Use a coffee blend containing roasted chicory root for an incredibly authentic, deeply rustic northern French flavor profile.
Sweetened Touch: Stir in a single cube of raw cane sugar to add a subtle caramel sweetness.
Prevent Sticking: Rinse your saucepan with cold water before pouring in the milk; the micro-thin layer of moisture keeps the milk proteins from sticking and scorching to the hot metal.
Serving Tips
Scale the Ratio: Always stick to a strict 1:1 ratio. Using too much milk dilutes the coffee's bitter, roasted notes, while too much coffee overpowers the velvety sweetness of the heated milk.
Skip the Foam: Do not whisk the milk into a frothy dome. Unlike Italian coffee culture, French café au lait relies on flat, hot, liquid steamed milk to ensure the perfect dipping consistency for pastries.
