Country of Origin

Sudan (with historical and cultural connections to breaded meat dishes across the Eastern Mediterranean)

Description

Bufteik Jidad is the Sudanese adaptation of a chicken escalope. Borrowing its name from the French word for a thinly cut beefsteak (beefsteck), this dish consists of skinless chicken breasts that are butterflied, flattened, and deeply seasoned with garlic, lime, and yogurt. They are then double-dredged to create a beautifully crisp, golden crust when deep-fried.

Presentation & How It's Eaten

The golden-brown chicken escalopes are crispy on the outside while remaining tender and juicy inside. They are typically served hot as a hearty, dry meat main course alongside french fries. In Sudanese household traditions, they are frequently paired with liquid-based dishes, such as traditional stews (mullahat and tabayikh), using the breaded chicken to balance the wet textures.

Ingredients

  • 1¼kg boneless, skinless chicken breasts, rinsed and trimmed of excess fat

  • 250g plain flour

  • 4 garlic cloves, pressed

  • ¼ cup malt vinegar

  • 2 tbsp mayonnaise

  • 2 tbsp thick yogurt

  • 1 tbsp table salt (plus more as needed)

  • 2 tsp ground black pepper (plus more as needed)

  • 2 tsp chili powder or flakes

  • 1 lime, juiced

  • 400g plain breadcrumbs

  • 4 large eggs, beaten

  • 1L neutral vegetable oil (for deep-frying)

Step-by-Step Directions

  1. Prep the Chicken: Butterfly each chicken breast by using a sharp knife to slice horizontally into the side lengthwise. Open it up so it resembles a butterfly, then cut it down into palm-sized pieces.

  2. Clean the Meat: Lightly coat each piece of chicken with a dust of plain flour, then rinse it thoroughly under cold running water. This traditional technique helps strip away any unpleasant raw odors or residual slime.

  3. Marinate: In a large bowl, whisk together the pressed garlic, malt vinegar, mayonnaise, yogurt, table salt, black pepper, chili powder, and lime juice. Taste the mixture to balance the spices, then toss the chicken pieces into the marinade. Cover and let it sit for 40 to 90 minutes.

  4. First Breadcrumb Layer: Place your breadcrumbs in a wide, shallow dish. Dredge a marinated chicken piece completely in the breadcrumbs.

  5. Flatten and Tenderize: Slide the breaded chicken piece inside a clean sandwich bag, leaving the bag unsealed so air can escape. Place it on a sturdy cutting board. Hold the bag securely with your non-dominant hand and use a meat tenderizer to firmly beat the chicken on both sides until it flattens into a uniform escalope (about 9cm x 13cm and 1½cm thick).

  6. Double-Tenderize: Remove the chicken from the bag, dip it back into the breadcrumbs to fill any newly stretched spaces, return it to the sandwich bag, and pound a second time until it reaches an even 1cm thickness. Lay the flat breaded chicken onto a tray, cover with a clean cloth, and repeat for all remaining pieces.

  7. Heat the Oil: Pour 1 liter of neutral vegetable oil into a large, deep frying pan over medium heat until hot.

  8. Egg Wash and Fry: In a wide bowl, beat the 4 eggs and season them with a pinch of salt and pepper. Submerge one flattened escalope entirely in the egg batter, lift it out, roll it one final time in the breadcrumbs to secure the coating, and lower it carefully into the hot oil.

  9. Drain and Serve: Deep-fry for 5 to 6 minutes total, turning once halfway through, until the exterior turns an even golden brown. Work in small batches without overcrowding the pan. Remove with a slotted spoon and drain on kitchen paper towels or a wire sieve before serving hot.

Optional

  • Additional Aromatics: Enhance the complexity of the marinade by incorporating 2 teaspoons of ground coriander, ¼ teaspoon of ground cardamom, ½ teaspoon of grated nutmeg, and/or 1 teaspoon of ground allspice.

  • Oven-Baked Alternative: For a lighter variation, place the double-breaded escalopes on a wire rack over a baking sheet, spray lightly with oil, and bake in a preheated oven at 200°C for 15 to 20 minutes, flipping halfway through until cooked through.

Cooking Tips

  • The Flour Wash Secret: Don't skip rinsing the chicken with flour first. It is an invaluable regional cooking secret that helps sanitize the poultry skin and eliminates any metallic or gamey flavors before marinating.

  • The Sandwich Bag Method: Pounding the chicken inside an unsealed plastic sandwich bag keeps your workspace completely clean and prevents the delicate meat fibers from tearing or sticking to the face of your meat mallet.
