Description

The iconic sweet refreshment that sparked a global phenomenon. Chewy, caramelized brown sugar tapioca pearls sit at the bottom of a creamy, perfectly balanced sweetened black milk tea, creating a distinct contrast of textures and rich flavors.

Presentation & How It's Eaten

Served iced in a tall glass or a sealed plastic cup, accompanied by an extra-wide straw specifically designed to suction up the chewy tapioca pearls along with the liquid.

Ingredients

  • 1/2 cup quick-cooking black tapioca pearls

  • 2 cups water (for boiling pearls)

  • 2 tbsp dark brown sugar (for the pearl syrup)

  • 2 tbsp hot water

The Milk Tea Base:

  • 2 cups water

  • 3 bags strong black tea (Assam or Ceylon)

  • 1/4 cup heavy cream or whole milk (or non-dairy creamer powder)

  • 2 tbsp sweetened condensed milk (or simple syrup, adjusted to taste)

  • Ice cubes

Step-by-Step Directions

  1. Brew the Tea Base: Bring 2 cups of water to a boil in a small saucepan. Add the black tea bags, remove from heat, cover, and let steep for 10 minutes to create a strong concentrate. Remove the tea bags and let the tea cool completely in the refrigerator.

  2. Cook Tapioca Pearls: Bring 2 cups of water to a rolling boil in a separate pot. Drop in the tapioca pearls and stir gently so they don't stick to the bottom. Once they float to the top, cover and boil for 5 minutes.

  3. Simmer and Plump: Turn off the heat, keep the pot covered, and let the pearls sit undisturbed for another 5 minutes to fully soften to a chewy texture.

  4. Create Brown Sugar Syrup: Drain the cooked pearls and rinse briefly under cool water. Immediately place them into a small bowl and mix with the dark brown sugar and 2 tablespoons of hot water. Let them steep for 10 minutes to absorb the deep molasses flavor.

  5. Mix Milk Tea: In a shaker or pitcher, combine the chilled black tea concentrate, your choice of milk or cream, and the sweetened condensed milk. Shake or stir vigorously until smooth.

  6. Assemble: Spoon the caramelized tapioca pearls along with their syrup into the bottom of two tall glasses. Fill the glasses with ice cubes, then gently pour the shaken milk tea over the top. Serve with wide straws.

Cooking Tips

  • Freshness is Key: Tapioca pearls lose their signature bouncy texture (Q-texture) and become hard or chalky if left in the fridge. For the ultimate chew, always cook your pearls fresh and enjoy them within 4 hours of boiling.
