Description
Bouillabaisse is Marseille’s legendary and highly protected fish stew. Originally a humble fisherman's meal made from bony rockfish that couldn't be sold, it has evolved into a luxurious masterpiece. The dish is defined by its rich, copper-colored broth flavored with saffron, fennel, orange peel, anise liqueur, and garlic, which is used to poach a variety of fresh, bone-in Mediterranean fish and shellfish.
Presentation & How It's Eaten
Bouillabaisse is served in two distinct courses. First, the aromatic broth is served hot in shallow bowls alongside toasted croutons rubbed with raw garlic and smeared with rouille (a spicy garlic-saffron-chili mayonnaise). The cooked fish and shellfish are then presented on a separate platter, sliced, and enjoyed with more broth poured over the top.
Ingredients
The Saffron Broth:
1.5 kg (3.3 lbs) mixed firm fish (such as red mullet, sea robin, monkfish, sea bass, or cod), cut into large chunks
300g raw mussels, cleaned and scrubbed
300g large raw shrimp, peeled and deveined
80 ml (1/3 cup) extra virgin olive oil
1 large leek (white and pale green parts only), washed and sliced
1 medium fennel bulb, chopped
1 large onion, chopped
4 ripe tomatoes, chopped
4 cloves garlic, crushed
2 tbsp tomato paste
1 strip of dried orange peel
1 tsp saffron threads, crushed
30 ml (2 tbsp) Pastis or Pernod (anise-flavored liqueur)
1.5 liters (6 cups) boiling water or fish stock
The Rouille (The Sauce):
1 large egg yolk
2 cloves garlic, finely mashed
1 tbsp fresh lemon juice
120 ml (1/2 cup) olive oil
1 pinch of saffron threads
1/2 tsp cayenne pepper or Espelette pepper
Salt to taste
Step-by-Step Directions
Sauté the Aromatics: Heat the olive oil in a large, wide stockpot over medium heat. Add the sliced leek, fennel, and onion. Cook for 8 to 10 minutes until softened but not colored. Stir in the crushed garlic and chopped tomatoes, cooking for 5 minutes until the tomatoes break down.
Build the Flavor Base: Stir in the tomato paste, saffron threads, orange peel, and Pastis. Cook for 2 minutes to let the alcohol evaporate.
Simmer the Broth (The Secret): Add any bony fish trimmings or heads (if available) and pour in the boiling water or fish stock. Bring to a rolling boil over high heat. Cook uncovered for 20 minutes to emulsify the olive oil and broth into a rich, orange soup. Strain the broth through a sieve, pressing hard on the vegetables to extract all the flavorful pulp, and return the liquid to a clean pot.
Make the Rouille: In a small bowl, whisk the egg yolk, mashed garlic, lemon juice, saffron, and cayenne pepper. Whisking constantly, slowly drizzle in the olive oil drop-by-drop until it emulsifies into a thick, fiery-orange mayonnaise. Season with salt.
Poach the Seafood: Bring the strained broth to a gentle simmer. Add the thickest, firmest fish chunks (like monkfish or sea bass) and cook for 5 minutes. Add the delicate fish, shrimp, and clean mussels. Cover and simmer for another 5 to 6 minutes, just until the fish is flaky and the mussels have opened.
Serve in Courses: Lift the seafood carefully out of the broth and arrange on a large serving platter. Ladle the hot, golden saffron broth into bowls. Serve with garlic-rubbed croutons and a bowl of the spicy rouille to spread on top.
Optional
Potatoes: Simmer sliced Yukon Gold potato rounds directly in the broth before adding the fish, serving them on the seafood platter.
Lobster: Add lobster tails cut in half to the poaching pot for an ultra-premium, modern variation.
Cooking Tips
Use Saffron Generously: Saffron is not just for color; its metallic, earthy flavor is essential to making an authentic Bouillabaisse.
The Rolling Boil: Unlike most stews, the broth must boil rapidly at first. This fast boiling forces the olive oil to emulsify with the cooking liquids, creating a rich, thick texture.
