Total time: 1 hour
Servings: 12 slices
Country of Origin: Brazil
Description
Distinct from American carrot cake, Brazilian carrot cake blends raw carrots directly with oil and eggs into a vibrant orange batter.
Features a airy texture topped with a pour-over chocolate glaze that hardens into a thin, crackly fudge shell.
Presentation
Baked in a rectangular 9x13 pan or ring mold pan.
Covered completely with glossy chocolate coating sliced into clean squares.
Ingredients
Cake Batter: 3 medium raw carrots (peeled and chopped)
Cake Batter: 3 large eggs
Cake Batter: 1 cup neutral vegetable oil
Cake Batter: 2 cups granulated sugar
Cake Batter: 2 cups all-purpose flour
Cake Batter: 1 tbsp baking powder
Chocolate Glaze: 1 cup cocoa powder
Chocolate Glaze: 1 cup sugar
Chocolate Glaze: 2 tbsp butter
Chocolate Glaze: 1/4 cup whole milk
Directions
Blend chopped carrots, eggs, vegetable oil, and sugar in a blender on high speed for 3 minutes until completely liquefied.
Pour carrot mixture into a bowl and gently whisk in sifted flour and baking powder until just combined.
Pour batter into a greased 9x13 inch baking dish.
Bake at 350°F (175°C) for 35 to 40 minutes until a toothpick inserted in the center comes out clean.
Prepare glaze by boiling cocoa powder, sugar, butter, and milk in a small saucepan for 3 minutes while stirring.
Pour hot chocolate glaze immediately over the warm cake so it forms a crisp crust as it cools.
Optional Variations
Cobertura de Brigadeiro: Replace glaze with thick Brigadeiro pourable sauce for an extra rich topping.
Bolo de Cenoura Vulcão: Bake in a bundt pan and fill the center cavity to overflowing with warm chocolate sauce.
Cooking Tips
Weigh raw carrots (approx. 250g total); using too much carrot adds excess moisture and causes cake density.
Pour chocolate sauce over cake right out of the stove while still boiling for a glossy finish.
