Tender strips of beef beef sirloin sautéed with mushrooms and onions in a rich, tangy sour cream and mustard sauce.
Presentation & How It's Eaten
Served hot over buttered egg noodles, rice, or crisp straw potatoes.
Ingredients
1.5 lbs beef tenderloin or sirloin, cut into thin strips
8 oz cremini mushrooms, sliced
1 large yellow onion, thinly sliced
2 cloves garlic, minced
1 cup sour cream (at room temperature)
1 cup beef stock
1 tbsp Dijon mustard
2 tbsp unsalted butter
1 tbsp all-purpose flour
Salt and black pepper
Step-by-Step Directions
Sear Beef: Season beef strips with salt and pepper. Heat 1 tbsp butter in a skillet over high heat. Sear beef quickly in batches (1–2 mins); remove beef.
Sauté Vegetables: Add remaining butter to skillet. Sauté sliced mushrooms and onions over medium heat for 6–8 minutes until golden; stir in garlic.
Make Sauce Base: Sprinkle flour over vegetables, cook 1 minute, then whisk in beef stock and Dijon mustard. Simmer 3 minutes until thickened.
Combine: Lower heat to minimum. Stir in room-temperature sour cream and return seared beef with juices to pan. Warm through for 2 minutes without boiling.
Serve: Ladle over hot buttered egg noodles and garnish with chopped parsley.
Optional
Pickles: Stir in 2 tbsp finely diced dill pickles for extra authentic bite.
Cooking Tips
Do Not Boil Sour Cream: Keep heat very low after adding sour cream to prevent sauce from separating or breaking.
