Origin
Region: Campania (Naples)
Historical Context: Though born in Eastern Europe and refined in Paris, the yeast-risen Babà found its true spiritual home in Naples during the 19th century, where street vendors perfected the art of soaking it in heavy rum syrup.
Description
Mushroom-shaped, incredibly spongy yeast cakes baked until deep golden-brown, then completely submerged in a hot, sweet syrup infused with dark rum and citrus peels until they become plump, glossy, and bursting with liquid.
Presentation
Served cold on shallow dessert plates, often split down the center and stuffed with a ribbon of vanilla pastry cream (crema pasticcera) and fresh wild strawberries.
Ingredients
For Batter: 250g strong bread flour, 3 large eggs, 80g softened butter, 20g sugar, 15g fresh yeast, a pinch of salt.
For Rum Syrup: 500ml water, 250g sugar, 150ml dark quality rum, zest of 1 lemon, zest of 1 orange.
Step-by-Step Directions
Make Sponge: Dissolve the fresh yeast in 2 tablespoons of warm water with a pinch of sugar. Mix with 50g of the flour and let rise for 20 minutes until bubbly.
Beat Batter: Combine the bubbly yeast sponge with the remaining flour, sugar, and eggs. Beat vigorously with a stand mixer for 10 minutes until an elastic, shiny, sticky batter forms. Beat in the softened butter until smooth.
Rise in Molds: Pipe the sticky dough into greased, cylindrical babà molds, filling them halfway. Let rise for 1–2 hours until the dough crowns over the top lip of the molds.
Bake: Bake at 180°C (350°F) for 20 minutes until dark golden-brown and bone-dry. Remove from molds and let cool completely.
Boil Syrup: Simmer the water, sugar, lemon zest, and orange zest for 10 minutes. Turn off the heat and stir in the dark rum.
Soak: Submerge the dry babà cakes into the hot rum syrup, turning them over for 2–3 minutes until they absorb the liquid and expand like sponges. Squeeze very gently and place on a wire rack to drain excess syrup.
Optional Variations
Babà al Limoncello: Replace the dark rum in the soaking syrup entirely with sweet Neapolitan limoncello for a bright, purely citrus coastal profile.
Cooking Tips
The baked babà cakes must be allowed to go completely stale and dry before soaking them in hot syrup. If they are still fresh and moist from the oven, they will dissolve into mush when submerged in the liquid.
