Description

Asir Gungulaise is a traditional, intensely refreshing Sudanese drink made from the dry fruit pulp of the iconic African Baobab tree (locally known as Gungulaise or Tabaldi). Tangy, tart, and naturally sweet, it is celebrated as a "superfood" drink because it is exceptionally high in Vitamin C, antioxidants, and essential minerals.

Presentation & How It's Eaten

This juice has a unique, beautifully opaque, milky-cream appearance with a smooth, velvety texture. It is a staple at Sudanese special occasions, weddings, and during Ramadan to restore hydration. It is always served thoroughly chilled, poured into tall glasses over plenty of ice, or blended into a frothy slush.

Ingredients

  • 350g baobab seeds (deshelled, fibers removed, and rinsed)

  • 2L lukewarm water

  • 100g–125g granulated sugar (adjust to taste)

  • Ice cubes (for serving)

Step-by-Step Directions

  1. Soak the Seeds: Place the cleaned baobab seeds into a large bowl and pour in the 2 liters of lukewarm water. Let them soak undisturbed for 2 to 3 hours, or until the chalky white fruit pulp coating the seeds becomes completely soft.

  2. Mash: Once softened, use clean hands to thoroughly massage and rub the seeds together directly in the water. This releases and dissolves the tart fruit powder, exposing the hard brown seeds underneath.

  3. Strain: Stir the mixture well, then pour it through a fine-mesh sieve or strainer into a large pitcher to separate the smooth liquid from the seeds and any remaining stray fibers.

  4. Sweeten: Add the granulated sugar to the strained juice, stirring vigorously until completely dissolved. Taste and adjust sweetness if desired.

  5. Chill and Serve: Pour the juice into glasses filled with ice cubes and serve immediately.

Optional Directions

  • Baobab Slush: Pour the finished juice into a high-powered blender with a large handful of ice cubes and blend on high until it reaches a thick, frothy, slushy consistency.

  • Alternative Sweeteners: Swap out the white granulated sugar for unrefined brown sugar, honey, agave nectar, maple syrup, or date sugar. For a fruity twist, you can also sweeten it by mixing in fresh orange juice or sugarcane juice.

  • Hibiscus Twist (Karkadeh Mashup): Some variations use half baobab juice and half hibiscus tea (Karkadeh) for a vibrant pink, ultra-tart fusion drink.

Cooking Tips

  • Patience yields flavor: Don't rush the soaking process. Giving the baobab a full 2 to 3 hours ensures you extract every bit of the nutrient-dense pulp from the seeds, resulting in a richer flavor and texture.

  • Warm, not hot: Make sure the water used for soaking is lukewarm, not boiling hot, to preserve the high Vitamin C content and the delicate, refreshing flavor profile of the fruit.
