Ingredients
1 cup short-grain white rice
2 cups water
1 cinnamon stick
1 strip fresh lime peel
4 cups whole milk
1 can (14 oz) sweetened condensed milk
1/2 cup raisins
1 tsp vanilla extract
Ground cinnamon for topping
Directions
Simmer white rice, water, cinnamon stick, and lime peel in a pot for 12 minutes until water absorbs.
Pour in whole milk and sweetened condensed milk; stir well.
Cook uncovered over medium-low heat for 20 minutes, stirring frequently, until rice softens and pudding thickens.
Stir in raisins and vanilla extract during last 5 minutes.
Discard cinnamon stick and lime peel; pour into cups and dust with ground cinnamon.
Optional Variations
Arroz con Leche y Coco: Replace 1 cup whole milk with unsweetened coconut milk.
Cooking Tips
Stir frequently while simmering milk to prevent rice from sticking to pot bottom.
