Ingredients:
2.5 cups all-purpose flour
3/4 cup sugar
3/4 cup cold unsalted butter, cubed
1 egg, beaten
1 pinch salt
5 large tart apples (e.g., Elstar or Granny Smith), peeled and diced
1/2 cup raisins
2 tsp ground cinnamon
2 tbsp lemon juice
Step-by-step directions:
Mix flour, sugar, salt, butter, and half of beaten egg to form a firm pastry dough; chill for 30 minutes.
Toss diced apples, raisins, cinnamon, and lemon juice in a bowl.
Press three-quarters of dough into bottom and sides of a greased springform pan.
Fill crust with apple-raisin mixture.
Roll remaining dough into strips and arrange in a lattice pattern across top.
Brush lattice with remaining egg wash and bake at 350°F (175°C) for 60 minutes until crust is golden.
Optional variations: Add chopped walnuts or a splash of rum to apple filling.
Cooking tips: Use a springform pan to preserve pie height and showcase distinct crust walls.
